Using this app you can manage to control screen timeout beyond the system settings.
You can now set maximum 1 hour screen timeout. So Watch screen will not switch to ambient mode if you are on any app. If you are on Watch face then this timeout will not work.
NOTE - This can drain your battery soon so use intelligently.
